Sorry for not posting the recipe sooner. It was late so I just posted and went to bed.

    What I did:

(I am not sure about the exact measurements because I eyeball everything so please adjust the seasonings to your own liking.)

-First I seasoned the chicken with 2 tsp each of salt, pepper, and garlic powder for 12 of those small pieces of chicken.

-Then I set up a station that had one bowl with seasoned flour and one with fried chicken batter.
For the seasoned flour I added about 1 cup flour, 1/2 Tbs paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp chili powder, 1 tsp black pepper, 1 tsp salt.
For the batter I made another bowl of the seasoned flour and added water to it until it was a thin pancake-batter-like consistency.

-I dipped the seasoned chicken first into the flour. Then I dipped it into the batter, making sure to let the excess drip off. Then it went into the flour again.

-Deep fry the battered chicken at medium heat for ten minutes. If you use larger pieces of chicken it will take longer to cook, obviously.

    ——-

Usually when I made fried chicken I would just dip the chicken into seasoned flour and fry it right away. I like the battering technique much more than what I used to do.

I did not brine or marinate the chicken the night before because I had no buttermilk though that definitely would have helped with the flavor because I had to go back and adjust the seasoning in the first step. But it still tasted good in the end without it.

You’ve titles wrong. You need to make it sound unnecessarily fancy. It need to be ‘free range chicken marinated in a old world style buttermilk and flour roux, fried in a cast iron skillet (insert 4 paragraphs about your ‘cast iron’ seasoning, never call it a pan).

I could never eat the chicken skin or any other poultry. However, the batter is still adhering to the chicken and cooked to a perfect colour, which is difficult to do and takes practice. Nice job OP

God damn seeing this reminds me of my holiday in Korea, there’s a fried chicken place called BHC, dear lord above I would sell a kidney to have just one more piece of their boneless chicken. I’ve just finished eating a lamb burger, the taste is still in my mouth, but now I’m thinking of BHC. Sweeeeeeet baby Jesus that stuff is godly. If you gave it to a vegan they’d immediately change their ways.

Legit asked my sister-in-law (who lives in Korea) to ship some over sometime but unfortunately she declined. If I can find any pictures of the chicken I’ll edit and put a link.

My fear of homemade fried chicken is the amount of oil you need and what to do with it when you’re done. Any advice on that?

I want fried chicken now. I use a mix of honey and Worcestershire sauce as a brine. I put garlic and Old Bay Seasoning in the flour. Deep fry til golden brown. Delicious.
